BBQ Chicken

Bbq Chicken on Pizza but Elevated

Inspiration

I grew up eating a lot of BBQ Chicken pizza. It was second to buffalo chicken of course. I tried to make it at home but elevated. Chicken is extra crispy from the tapioca flour and the sauce has a lot of flavor.

Ingredients

  • 1 cup Ketchup
  • 1/3 cup apple cider vinegar
  • Chicken Bouillon
  • Worcestershire sauce
  • Brown Sugar
  • Ranch
  • Chicken
  • Frying Oil
  • Low Moisture Mozzarella
  • Fresh Mozzarella.

Steps

  1. Add cut up chicken thighs, soy sauce, mirin, and chicken bouillon.
  2. Dry dredge add tapioca starch, all purpose flour, salt, baking powder, paprika, and chicken bouillon.
  3. For wet batter mix half the dry dredge with water.
  4. Add cut up chicken thighs into wet batter and then cover in dry dredge.
  5. Fry at 350 F for 2 mins for initial fry and then let dry ad fry again for 1 min.
  6. Bbq sauce mix ketchup, apple cider vinegar, chicken bouillon, paprika, soy sauce, garlic powder, mirin, onion powder.
  7. Reduce on stove and add cold butter till emulsified and glossy.
  8. Add fried chicken to bbq sauce.
  9. Preheat oven with baking steel at 550 F for at least an hr.
  10. Let Pizza dough proof for at least 2 hrs.
  11. Stretch Pizza dough thin and add grande mozzarella as base.
  12. Add sauced fried chicken on top.
  13. Add optional fresh mozzarella.
  14. Bake at 550 F on baking steel for 8 mins.
  15. Take out and swirl on bbq sauce, ranch, and grate fresh parmigiano reggiano.
