Birria
Birria on pizza actually works very well. Braised meat in a spicy beef broth on top of crispy pizza dough is a recipe for a successful partnership.

Inspiration
I've seen Birria Pizza but it's usually just a quesabirria. So I decided to make an actual Birria Pizza.
Ingredients
- Oxtail 1 lbs
- Chuck 1 lbs
- 1/2 onion
- 3 cloves garlic
- 1 tsp coriander
- 1 tsp salt
- 1 tsp cinnamon
- 1 tsp cumin
- 3 guajillo chilis
- 4 ancho chilis
- 3 arbols
- water
- 1/2 cup tomato sauce
- beef stock 4 cups
- 450 grams Pizza Dough
Steps
- Sear Oxtail and Chuck.
- Cook onion, garlic, coriander, salt, cinnamon, cumin, chilis with some water and oil till soft.
- Blend the chili mixture together.
- Add to pot with oxtail and chuck, tomato sauce, and beef stock.
- Braise for 5 hrs.
- Preheat oven with baking steel at 550 F.
- Prepare pizza dough.
- Stretch dough.
- Top with low moisture mozzarella, birria meat, and optional Oaxaca cheese.
- Bake at 550 F for 8 mins on baking steel.
- Take out of oven and top with parmigiano reggiano, cilantro, and olive oil on crust.
- Cut into 8 and enjoy!
